Recipe-Peanut Butter Spinach


Ingredients (serves 4-6)

 1 large onion, chopped

 1 green bell pepper, chopped

 2 tablespoons peanut oil

 1 lb fresh spinach, washed and trimmed

 1 large tomato, chopped

 1/2 teaspoon salt

 1/4 teaspoon pepper

 1/4 cup peanut butter (can use chunky if preferred)



Method
Prep Time: 5 minutes
Total Time: 15 minutes

1. Heat peanut oil in skillet. Sweat the onion and green pepper for 3-5 minutes or until tender.

2. Add spinach and tomato to skillet.

3. Replace lid and cook on low heat for about 5 minutes, or until spinach is tender.

4. Stir in all remaining ingredients. Cook until heated through.

5. Serve with boiled rice or couscous.
